Gluten-Free/Dairy-Free/Paleo TOMATO SOUP!!

Ingredients:

  • 1 tablespoon of ghee or grass-fed butter
  • 2 celery sticks
  • 1 onion
  • 3 zucchinis
  • 5 tomatoes
  • 4 cups of bone broth
  • 1 teaspoon of basil
  • pinch of black pepper

Directions:

  1. Heat up ghee in a pot.
  2. Slice up the onion, celery, and zucchinis, and let them cook in the pot with the ghee for 10 minutes.
  3. Slice up tomatoes in slices of 4 and let them cook with the rest of the vegetables for another 5 minutes.
  4. Add basil and black pepper into the mix.
  5. Add 4 cups of bone broth into the mix with all the vegetables and let it sit for 15 minutes covered at low-heat.
  6. Move vegetables from pot to blender and blend from medium to high speed for 3 minutes or until all the vegetables are blended.
