Dairy-Free/Gluten-Free/Vegan/Paleo CHOCOLATE CHIA PUDDING!!

Ingredients:

  • 2 cups almond milk or coconut milk
  • 1/4 cup Monk Fruit or coconut sugar 
  • 1/4 cup cacao powder
  • 1/3 cup chia seeds

Directions:

  1. In a large mixing bowl whisk together the coconut milk, Monk Fruit, and cacao powder until well mixed.
  2. Add the chia seeds and mix all together for 1-2 minutes.
  3. Transfer the pudding into a container and refrigerate for 1-2 hours.

You can top this with chocolate chips, blueberries, coconut flakes, strawberries, mango, and/or other fruit for some extra flavour before serving.
