Ingredients:
- 1/3 cup Bob’s Red Mill Small Pearl Tapioca
- 3/4 cup of water
- 2 1/4 cup coconut milk
- 1/2 cup Monk Fruit or coconut sugar
- 1/2 teaspoon vanilla extract
- pinch of salt
Directions:
- Soak pearls of tapioca in 3/4 of room temperature water for 30 minutes
- Do not drain water from tapioca after soaking
- Add 2 1/2 of coconut milk, pinch of salt, and 1/2 of coconut sugar or Monk Fruit to tapioca and stir over medium heat until boiling
- Stir constantly
- When boiling, turn the heat off and wait 15 minutes to add vanilla extract and stir
You can serve the tapioca either warm or chill with some mango or berries for some extra flavour!!
